Elvio Galasso : A first generation Canadian, was born to Southern Italian parents. His earliest memories are from his Nonna Anna's basement kitchen in St. Leonard where he would eat raw cavatellis made by his Great Grandmother Nonna Lucia and Great aunt Zia Rosina & also from his Nonno Vincenzo’s country farm that ranged from 2 acres of garden, where they bred rabbits and had a small chicken coop from which he would get fresh morning eggs from.Combining what he learned at home and a passion for food, he instinctively knew his career would revolve around food at the age of 13. Elvio then started working in reception halls & restaurants .
By 1993-1996 Elvio found his way to culinary school doing a program called Cucina Italiana where he went off to work in northern Italy in the province of Treviso, learning classic northern dishes and flavours that would be new to him .
Elvio made his way back to Montreal and worked in great restaurants, until he opened up his own restaurant in 2001 .
In 2003, he was then approached by his former professor to be become a teacher in the school that motivated him to dig deep into his roots to maintain and perpetuate his italian traditions & culture.
Since then, Elvio has built a business catering to a great clientele and continues to enrich people with his authentic italian cooking.
